Sorry it’s been so long since I uploaded. I could say I’ve been busy, but I really haven’t. What I’ve been is incredibly lazy. Temps down here have been in the 90s and honestly when summer weather hits I mostly lay around under fans and read a lot.
But here’s what I made for dinner tonight! It was quick and easy but oh so yummy.
Tonight I had Yves Good Dog hot dogs on wheat buns.
They were disgusting. I knew there was a reason I didn’t buy processed fake meat. Bleh. Back to making all my meals homemade.
Finally! A breakfast picture! I made these waffles with a standard mix but instead of egg and milk I used applesauce and almond milk, then threw some cinnamon in. A sprinkle of confectioner’s sugar and some sliced strawberries finished it off. They were really, really good.
Rice and bean rollers. These are so yummy. I just spread some avocado on a tortilla then pile on rice, beans, onions, peppers, or whatever I happen to have on hand, then roll them up and eat ‘em.
I made spaghetti and bean balls for dinner! Nom nom. I really need to work on incorporating more raw foods other than fruit into my diet. I’m just not big on salads and I honestly don’t know what other ways to serve raw vegetables. Any ideas?
Dinner: I made this onion quiche thing which was really good but neither oniony nor quiche-like. With all the nuts I used in it, I think it would be much more realistic to call it a nut torte. Regardless, it was filling and the salads were a good companion. That dark glass in the back ground is a mason jar full of sweet tea, my husband’s contribution to the meal. :)
I made stuffed peppers for dinner the other night and decided to eat the leftovers for lunch today. I think it’s even better the second go around!
I used quinoa, black beans, corn, tomatoes, onions, and spicy mexican seasonings for the stuffing. I’m trying to go off caffeine this month (I’m addicted to soda and sweet tea) so I’m having a tall glass of no caffeine tea. I expect plenty of headaches for the next few days but I know this will really help my overall health. Soon I’ll tackle sugar. Baby steps but I’m getting there.

I was craving some comfort food like never before. I don’t know if it was the day I had or the weather or what but I wanted some good old fashioned Southern cuisine.
Tough to do on a vegan diet.
I managed, though and this is the result! Potato salad, cornbread dressing and pinto beans. It tastes exactly like the unhealthy, fat and animal laden originals but is 100% vegan.
Nom nom. I ate far more than I should have but I guess every now and then isn’t going to be a problem. It was just one of those days.
Lunch: salad sandwich and vegetable chips.
I don’t usually like to eat salads but I realized I could make it feel meal-like if I add bread. I just piled on my salad fixin’s and added poppyseed dressing (dairy free). The chips are from World Table.
I realize I don’t post breakfast pics but up until now they’ve mostly been oatmeal or fruit but I’ve got a few things I want to try (waffles, tofu scramble, that sort of thing…) so I’ll start posting those soon too.

Broccoli and Potato Soup with maple bread.
Okay, the recipe was for cornbread but being from the South I just can’t call it that. It was good, don’t get me wrong, but it definitely was not cornbread. :)
The soup was easy to make thanks to my brand new immersion blender. *swoon*
